Weeds... or Lunch?

Hiding below the Marigold at the top with the yellow highly scented flowers, the plant at the bottom of this image is a Portulaca variety called Common Purselane.
Some might automatically dart their gloved hand or trowel towards it to pull it out like an unwanted weed, but stop before it's too late, you'll want to keep this one.
Purselane is a highly nutritious, annual weed, it's drought- tolerant, has thick green leaves with reddish stems and small yellow flowers.
High in Omega-3 fatty acids, it's a fantastic source for Vegans, Vegetarians and Plant based diets.
You can use it in salads, soups, stir fries and it has a peppery, lemony taste.
It is also high in vitamins C and A, and often regarded as a superfood.
What "weeds" have you tried? Perhaps some dandelion leaves in your salad, some raspberry leaf tea, or some fennel seeds in your vegie burgers. Remember you must know what you're eating before trying. Don't rely on AI descriptions to tell you if something is edible. Hopefully some purselane pops up in your garden too!
